Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britain’s culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steel’known for its long-lasting durability and unparalleled sharpness’clad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth. The long and thin gyuto blade (20.5cm), which is well-suited to a rocking motion, resembles a European chef’s knife and is just as versatile. You can use it to slice meat, chop onions, julienne vegetables, and so much more. (As with any Japanese-style knife, be careful to avoid strong, direct impact against bones, as that could cause the blade to chip.)
