Heatspreads gradually so flavours and aromas are retained, and it is able to hold on to very, very high temperatures, which is what makes it so excellent at searing foods. The black matte enamel has a slightly textured finish that makes it more stick-resistant and stain-proof than white enamel. This pan is also extremely heavy-duty, will not warp or rust, and can be used onall heat surfaces, including induction and the barbecue.
