Located in a small workshop under an archway in South London, Blenheim Forge’s Japanese-style carbon steel knives are handmade and unique. Each knife is crafted with a core of premium Aogami super steel, clad with rust-proof stainless steel until the tip of the blade. This steel is known not just for its sharpness, but its ability to maintain that sharp edge for long periods of time, and how easy it is to sharpen. The stainless steel-clad blades make these knives easier to keep clean, as there is no need to oil the sides of the blades to prevent them from rusting. What sets the Full Tang range apart is the handles, which have copper rivets and an ergonomic shape in the tradition of European knives, as well as a full tang (the exposed metal along the handle). The full tang shows how each knife is made from a single piece of steel, which allows for more controlled feel when chopping and excellent blade-to-handle balance. The walnut wood is sustainably sourced from fallen trees in the M25 area by an enterprise that trains underprivileged youth in joinery and furniture making. Exclusive to Borough Kitchen, this santoku is shorter and straighter than a standard chef’s knife, but no less versatile. It will slice, dice and mince a multitude of ingredients.
